Dutch Baby

Prep Time: 10 minutes

Baking Time: 20 – 25 minutes

Serves: 4

 

For the Dutch Baby Batter

♦ 1 cup all-purpose flour

♦ ½ teaspoon Kosher salt

♦ 1 cup whole milk – room temperature

♦ 4 eggs – room temperature

 

To Prepare Dutch Baby Pan

♦ 3 Tablespoons regular or unsalted butter

 

For Dutch Baby Garnish

♦ For Sweet Version: Sprinkle with cinnamon and powdered sugar

♦ For Savory Version: Top with cracked black pepper and parmesan cheese

 

This dish can be either sweet or savory, depending on what you decide to serve with it.  Growing up, we always had the sweet version served with fresh fruit salad.  This would be an excellent dish as an accompaniment to a roast, or even with something like chicken Marsala – just make sure you get the timing right, because the Dutch Baby will begin to deflate the second it’s out of the oven.

Place a 3.5 quart or larger heavy saucepan on the medium rack of your oven.  Turn the oven on to 425 degrees and proceed to make the Dutch Baby batter.

Sift the flour and salt together into a medium sized bowl.  Whisk the milk and eggs together in a large measuring cup, then pour about half of it over the dry ingredients.  Mix thoroughly with a whisk (there will be a few lumps), then add the rest of the egg/milk liquid and stir together but do not over-mix.  Strain the mixture over the large measuring cup, using the whisk to press it through your sieve.  You can also dump all of the ingredients into a blender and blend thoroughly.  Set aside.

Once the oven has finished preheating, place the butter into the saucepan inside the oven.  Allow the butter to melt and wait for it to get bubbly and slightly brown.  Give the Dutch Baby batter a stir and pour it into the hot pan over the butter.  Let the Dutch baby bake for 20 to 25 minutes until it has risen significantly and has a nice golden-brown color on the edges and the very top (do not open the oven during this time!).  While it is baking, make sure you have a trivet or wire rack ready on your table and also make sure the garnishing ingredients are close at hand.  Remove the Dutch Baby from the oven and garnish with your desired toppings, then allow it to cool and deflate for about 5 minutes before serving.  Enjoy!
